Summer Recipe: Rosemary Chicken with Potatoes

This one looks great, and even though she uses dark meat, that can be substituted.

Slow Cooker Rosemary Chicken and Potatoes
Yield: 4-6

Ingredients:
  • 6 Chicken Drumsticks
  • 6 New Red Potatoes, halved
  • 1/2 Cup Olive Oil
  • 1 Tbsp Rosemary
  • 1 Tsp Oregano
  • 1 Clove Pressed Garlic
  • 1 Lemon, halved
Directions:
  1. In a 5 quart slow cooker, being by spraying it with non stick spray. Next, place the potatoes on the bottom of the slow cooker.
  2. Then, top the potatoes with the chicken drumsticks. Pour the olive oil evenly over the potatoes and chicken then add in the rosemary, oregano, and garlic.
  3. Adjust the measurements as well if you use more or less potatoes and chicken.
  4. Lastly, squeeze the lemon juice of half a lemon evenly over the potatoes and chicken.
  5. Cover and cook on low for 8 hours.
  6. Serve with sliced lemon to garnish.
