Slow Cooker Carrot and Sausage Stew

1 baking potato, cut into 1/2" cubes
1 sweet potato, peeled and chopped
1 bag baby cut carrots
2 onions, chopped
1 lb. smoked fully cooked sausage, sliced
1 14-oz. can ready to serve chicken broth
1 14-oz. can diced tomatoes with seasonings, undrained
2 tsp. sugar
1/2 tsp. dried thyme leaves
1/4 tsp. pepper
1/2 cup Parmesan cheese

Combine all ingredients except cheese in a 3-4 quart crock pot. Cover slow cooker and cook on low for 7-9 hours until vegetables are tender. Serve with cheese.
