12 oz cooked frozen corn kernels
14 oz canned black beans
1 large uncooked onion(s)
1 large sweet red pepper(s)
1 Tbsp ground cumin
1 Tbsp chili powder

In a bowl, wisk beef stock, ground beef, tomato paste and spices together. Finely chop onion and pepper and then add them to the bowl along with the can of rotel and bag of frozen corn. Next add rinsed and drained black beans. Mix the ingredients until well combined and then transfer mixture into a 3qt or larger slow cooker. Cook on low for up to 12 hours or 6 hours on high.
