Crock Pot Eggplant Chicken Parmessan Recipe

    Ingredients

    • Eggplant, fresh, 1 eggplant, peeled
      Chicken Breast 2 breast, bone and skin removed
      Marinara, 3 cup
      Panko Bread Crumbs, Plain, 1 cup
      Cheese, Mozzarella, Low Moist/Part Skim, 16 oz
      Egg, fresh, whole, raw, 2 large
    Peel the eggplant first, slice thin, dip in eggs and then bread crumbs. Grated the cheese. Open marinara jar. Layer ingredients, put 2 chicken breasts in the middle, layer some more. Cook in slow cooker on high for 8 hours if frozen chicken or 6 if thawed.
