Ingredients:
- 1 head(s) cauliflower, cut up
- 1/4 cup(s) water
- 1 teaspoon(s) salt
- 2 teaspoon(s) lemon juice
- 2 anchovies (optional)
- Slowly cook cauliflower, 1/4 cup of water, and a teaspoon of saltcook in slow cooker on med for an hour or until the vegetable is soft enough to mash.
- Drain off excess water and puree the cauliflower and 2 teaspoons of lemon juice in a blender until smooth -- if you like, blend in two anchovies for a hint of briny flavor.
