apricot and brie dip

1/2 cup dried apricots finely chopped
1/3 cup plus 1 tablespoon apricot preserves, divided
1/4 cup apple juice
1 round wheel brie chess 2 pds rind removed, cut into cubes
crackers or bread slices

combine apricots, 1/3 cup apricot preserves and apple juice in crock pot. cover; cook on high 40 minutes. stir in cheese. cover; cook on hight 30 - 40 minutes or until chess is melted. store in remaining 1 tablespoon preserves. turn crock pot to low; serve warm with crackers.
