Punkin and White Bean Stew

Getting Ready For The Fall- here's a recipe you might find interesting. I will have to alter it just a bit and take out the heavy cream.



• 1 package (20 oz.) Great Northern bean or any you prefer

• 2 ham hocks

• 1 can pumpkin (not pie mix)

• 1 large yellow onion, diced (approx. 2 cups)

• 1 cup sliced carrot (small rounds work great)

• 1 cup diced potato

• 1/2 tsp. allspice

• 1/2 tsp. cinnamon

• 1/2 tsp. clove

• 1/2 tsp cumin

• 1/4 tsp. cayenne

• 1/8 tsp. nutmeg

• 1/2 cup heavy cream

• 1/2 cup apple cider

• 7 cups of water

• 3 tbsp. chopped chives - for presentation

This sounds interesting. I have not been much of a white bean person, but this I will have to try sometime. It seems the taste of the pumpkin would complement the white beans.
 
Your right Barbara, I think the pumpkin would compliment the bean quite well. I'm gathering up my recipes for the fall and winter seasons.
