Overnight Oatmeal

Ingredients:
  • 1/2 cup steel cut oats
  • 2 cups water
  • 1/2 tsp. cinnamon
  • 1 teaspoon vanilla extract
  • 1/2 cup raisins
  • Pure maple syrup for topping

Directions:
  1. Combine everything in a small, 1 or 2 quart slow cooker. No larger. (You will need to multiply the recipe for larger slow cookers)
  2. Cook on low for 8 hours.
 
After trying the breakfast casserole, I'm really excited about overnight meals. I don't know why I never thought of it. I always thought slow cooker= start meal in the morning and dinner will be ready after work. It's so great to put it on when you're going to bed and wake up to warm breakfast!! Thanks for sharing
 
You are absolute right amber summer. I also have been eating soup for breakfast. It's a great way to start the day.
