Favorite winter time recipes?

It's starting to get cold outside, at least here in Kentucky, what are some of your favorite crock pot recipes for those chilly nights?
 
Refrigerator clean out stew. I almost always have a few vegetables or slices of roasted meats left over. I toss almost all the vegetables into the crockpot and what ever left over roast I have until the crockpot is filled to the top with ingredients. I then will brown a large onion and a full head of minced garlic. Toss in a few bay leaves, a teaspoon each of thyme, marjoram, basil and a half dozen or so of coriander seeds. I then add water to the top of the vegetables and meat mixture, Turn the crocpot on low and its ready six hours later.
 
That's actually a really great idea! I have various meats in the freezer but you know it's not enough to make a whole meal on it's own, so thanks for that! I'll be giving this a try sometime here soon.
