Crock Pot Sausage

This recipe is super simple. It's great with a pot of bean, potato salad and slaw. Add some sliced home-grown tomatoes and cucumbers and you're in heaven!

CROCK POT SAUSAGE
2 links/rings pork and beef sausage (In Texas, links are tied to form a ring. If cut apart and stretched out, the link would be about 20-24 inches long.)
1 med jar of peach or apricot preserves
2 tablespoons spicy brown mustard
crock pot liner (optional)

Cut up the sausage in bite size pieces and put in crock pot.
Spread the preserves over the sausage.
Spread the mustard over the preserves.
Put lid on and cook on high for 2 hours. Open and stir. Cook an additional hour or so on high. Do NOT add any liquid. The sausage will make its own juice. After 3 hours, turn down to low and cook a bit longer if you want the sausage more caramelized.
