Crock Pot Cilantro-Lime Shredded Chicken

1 whole chicken
4 cubes frozen lime juice
1 bunch fresh cilantro
1 medium onion, cut into strips
1/4 tsp cumin
1/4 tsp ground black pepper
1/4 tsp granulated garlic
dash salt
1/2 cup cooking sherry

Place the chicken in your 4-qt or larger crock pot and turn it on to medium heat. Pour the sherry over the chicken, then arrange the cilantro over the top of the chicken. Sprinkle with cumin, pepper, garlic and salt, then place 4 cubes frozen lime juice on the chicken. Place the lid on the crock pot and allow to cook 8 hours.

2 cubes frozen lime juice
1 can black beans, rinsed
1 small bag frozen or 1 can corn niblets
2-3 green onions, chopped
dash cumin
dash granulated garlic
salt and pepper to taste

After 8 hours has gone by, remove the chicken and onions to a separate bowl then strain the cooking liquid into a small stockpot. Add 2 more frozen lime juice cubes and strip the chicken from the bones. Discard the cilantro, bones and skin from the chicken and place the onions and chicken meat in the stockpot with the cooking liquid. Add green onions, black beans and corn, then season with additional cumin, garlic, salt and pepper to taste.
