A Soothing Soup Recipe

I used to make this soup with a smoked ham hock. One day my mom made an awesome baked ham with cloves and pineapples; I have to get the recipe. Anyhow, I used the ham bone (which had a good amount of meat on it) in place of the smoked ham hock. I could not eat enough of this soup. You can use smoke turkey necks if you're not into pork. This recipe is for one of my favorites- Senate Bean Soup.

1 1/4 cups dry navy beans.
2 tablespoons olive oil
2 carrots, finely dice about 3/4 cup
1 finely mined garlic clove
1/2 finely diced medium onion (I like garlic and onion so I add a little more)
1 quart chicken or vegetable broth
1 smoked ham hock or ham bone
1 potato peeled and diced.
sachet 3-4 whole black peppercorns and 1 whole clove in a teaball or tied in a cheesecloth pouch
salt to taste
white pepper to taste
tabasco sauce to taste

I place all of the ingredients in the slow cooker except for the potatoes. I add the potatoes when there is one hour left for cooking. I have been watching my salt intake so I leave the salt out. I figured the hambone / smoked ham hock and chicken broth was salty enough. That said, tweak it to please your palate and enjoy.
 
I love smoking ham at different times during the year. I will have to remember this and give it a try with the smoked ham bone and meat leftover. Thank you for the slow cooker recipe!
